- Boursin® Garlic & Fine Herbs
- white onion
- green cabbage
- olive oil
- parsley
- chives
- ground pepper
- nutmeg
- lemon
- egg yolks
- grated Parmesan cheese
Preparation
Preparation:
- Sweat the white onion in olive oil
- Brunoise the cabbage leaves, sweat, and remove from
heat - Mix Boursin® with cooked cabbage and chopped herbs,
pepper, nutmeg, grated lemon - Add 2 egg yolks to bind.
- Add grated parmesan.
Assemble the raviolo:
- Pipe Boursin® mixture onto the
raviolo base, add an egg yolk over top of mixture. - Seal the edges with warm water.
- Cook the raviolos in salted water, drain and coat in a
water/butter emulsion. - Serve immediately.
